Sustainable Sourcing

It is our policy to source the majority of our fresh fish locally and sustainably.

We are registered as First Buyers, meaning Chapman's is allowed to buy direct from fishing boats. Our vans end their delivery runs at the coast, where they collect local fish straight from the nets to be used for the next day's delivery; dramatically reducing food miles when compared to a centralised delivery structure.

Our own fleet and daily collections mean we are intimately involved with the local fishing community on the Kent and Sussex coasts and actively support them by paying fair prices promptly. These relationships mean we have at our disposal an intimate understanding of seasonal runs, and up to the minute awareness of quota allocations.

With our focus on using responsible sourcing as much as we can, our clients can trust that we value fish enough to ensure it is here to stay. All our catches are traceable to port and even to the individual named boats. In instances where items are not available locally, yet in a lot of demand from customers, we will buy fish from the markets.

The Sportsman Restaurant

The first evidence of an inn at the site dates back to 1642 but the surrounding area of Seasalter was entered in the Domesday Book as belonging to the kitchens of Canterbury Cathedral. Even then it was an area of food production, farmed by the monks, supplying produce for the influx of religious tourists after the murder of Thomas Beckett in 1170.

We took over The Sportsman in November 1999 with the intention of serving good food in relaxed and informal surroundings. We have held a Michelin star since 2008.

The West House Restaurant

The West House, opened by Graham and Jackie Garrett in 2002, is a small family-run restaurant, with a reputation for fantastic food, earned through Graham’s focus on excellent delivery of the finest ingredients.

The restaurant gained a Michelin star after its first year, and has held it ever since. The West House is that rare thing,

a perfect local restaurant, many people’s favourite secret food destination, and the subject of many a pilgrimage.

The small dining room, in a 16th Century weaver’s cottage on Biddenden High Street, is a lovely and characterful place to relax and enjoy the food. The High Weald is an area of outstanding natural beauty, and rich with historical interest, providing many additional reasons to visit the area.
