Also known as corvina or meagre, stone bass is a fish which grows to a very handsome size - much bigger than most farmed sea bass. That means we can fillet luxurious thick fillet steaks from it at that you can use in recipes...
It's a low fat fish, pleasant without being really distinctive. It has nice white muscle flakes and of course comes in gratifyingly large steaks, boneless when you buy them from us. We've seen it compared favourably with black cod, but that would be overdoing it.
